Recipe - Peanut Butter Blondies



Disclaimer: I am not a baker. However, I managed NOT to screw these up; they were quite scrumptious! I decided that I ought to make baked goods from scratch and...had peanut butter around =]. I also think changing it up and making blondies rather than brownies is rather fun.

Step 1: Ingredients (serving size: 12-16 blondies, 9×13 pan)
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup peanut better
  • 1/2 cup (1 stick) unsalted butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 spoonful (or MORE!) of Nutella
  • 1 cup chocolate chips
  • 2 cups brown sugar
  • 2 eggs
  • 2.5 cups all-purpose flour
      Ingredient notes:
  1.  Baking powder - If you don’t have this, which I didn’t, you can combine 1/4 tsp baking soda with 1/2 cup of sour cream to get the same effect on the baking.
  2. Chocolate chips - I'm not a fan of chocolate chips so I smashed a 13 oz. bar of chocolate that had cacao nibs in it. It provided a delightful dark chocolate crunch to the blondies.



Step 2: Preparation
If you didn’t have baking powder, you can mix your baking soda and sour cream now.



Put all of your DRY ingredients in a mixing bowl.



Smash your chocolate if you’re not using chocolate chips.



Grease your 9×13 baking pan.

Step 3: Butter base
Melt the butter and brown sugar together until it’s nice and smooth. Pre-heat your oven for 350 degrees Fahrenheit.




Step 4: Completing wet ingredients
Remove the pot/saucepan from heat. You can mix your dry ingredients while waiting for the mixture to cool just a little bit. Then, mix in the peanut butter, Nutella, eggs (one at a time), and vanilla extract in that order. Stir.






Step 5: Making the batter
Pour the wet mixture in with the dry to create your thick, creamy batter =]. Stir it well!



Step 6: Preparing for the baking
Pour your mixture into the pan and spread it out evenly. Sprinkle the top with your chocolate.




Step 7: Baking
Place it in the oven and bake for 25 minutes. Your apartment/dorm/house should now smell delicious, and your tummy should be grumbling.



Step 8: Completion and eating
After it has cooled a bit, cut it up and enjoy with a nice glass of milk/soymilk/something that will wash down its richness! Yum yum =]
