Recipe - Tomato and Shrimp Angel Hair Pasta

Like most things I make, this came about from being hungry and wondering what could be scrounged up from the food already in my fridge/freezer/cabinet.
 
Step 1: Ingredients (serving size: 2-3 dinner portions)

  • olive oil (for pan)
  • garlic salt (to taste)
  • pepper (to taste)
  • 1/2 white onion, sliced
  • 1/2 tbsp parsley
  • 1/2 cup sundried tomato vinaigrette dressing
  • 1 sprig green onion, sliced
  • 2 roma tomatoes, diced
  • 8 oz angel hair
  • 16 oz white shrimp, shelled (size 31-40)



Step 2: Slicing
Slice up the shrimp and onion. Place in a bowl with the parsley, pepper, and half of the vinaigrette. Prepare your vegetables appropriately and top with the garlic salt. Heat up a skillet at this time as well as start a pot for boiling water.



Step 3: Cooking the shrimp and angel hair
You will not need very much oil in the pan because there will be some in the dressing but place some in before adding the shrimp and onions. Cook the angel hair according to box directions. Drain the pot of water before putting it back on the stove at about medium heat. Add the remaining dressing to the angel hair. Then add the cooked shrimp.


Step 4: Completion and eating

The tomato mix comes last because tomato doesn’t keep its shape very well after much exposure to heat. This way, your dish will look and taste delightfully fresh still.
