Recipe - Spinach Artichoke Dip


Spinach artichoke dip used to be one of my most favorite things to order in restaurants. I'm not saying that it's bad now - I've just been trying to expand my palate. Anyhow, for a board game night with friends, we were just going to bring snacks so spinach artichoke dip was what I chose. It turned out deliciously fantastically. Give this easy recipe a whirl. You won't want to order it out again when you can make it at home! (By the way, relevant.)

Step 1: Ingredients (serving size: party size!)
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/3 cup grated Parmesan
  • 1 cup artichoke hearts, chopped (marinated optional)
  • 8 oz. cream cheese, softened
  • 12 oz. chopped spinach

Step 2: Preparing the vegetables
I actually ended up using a bag of frozen spinach for this. It's actually fine to do this as frozen vegetables are quite good for you. Thaw and squeeze out excess liquid. Chop up artichoke hearts.

Step 3: Preparing the base
Cream the cream cheese and mix together with sour cream, mayonnaise, salt, garlic powder, and the Parmesan cheese. Warm in microwave for approximately a minute if needing extra softness.

Step 4: Finishing
Mix vegetables into the creamy base and taste. If wanting to make spicy, add in some hot sauce or red chili pepper flakes. If you prefer, warm dip is easily achievable through a microwave or low temperature setting oven. Dig in!
