Recipe - Cucumber Salad


Oh look, a non-entree salad for once. I had bought a cucumber when I went grocery shopping and realized that I hadn't designated a specific dish for it. Duc had never had cucumber salad before and despite it being a very summery type of dish, I figured I'd put together a cucumber salad. Oh so refreshing! It was a nice side item to our dinner of other side items (hummus & seaweed salad...health for the win?).

Step 1: Ingredients (serving size: 2)
  • 1/4 red onion, diced
  • 1/2 tsp mustard powder
  • 1 large cucumber, diced
  • 1 tsp garlic salt
  • 1 tsp black pepper
  • 1 tbsp olive oil
  • 2 Roma tomatoes, diced
  • 2 tbsps white vinegar
Step 2: Prepping the ingredients
The cool thing about salads is how a lot of it is to taste. You can follow my guidelines above but can also adjust to your liking. That being said, if you feel the onion to cucumber ratio is not preferred, change it! Anyhow, dice all your items. If you want, you may salt (with regular salt) the cucumber pieces a bit to draw out some of the liquids so as not to have it make everything watery.

Step 3: Finishing
Combine ingredients! Toss and place in the refrigerator for a few minutes (though my vegetables were right from the fridge so I didn't let them sit in there). Toss again in the liquid that has collected. You may drain some if you'd like. Enjoy!
