Recipe - Cheddar Grits


I had a hankering for some grit-goodness one morning (and to make breakfast to start off a long day of holiday shopping) so I decided to finally use the bag of grits I had brought home from school. I had never made grits before but figured that it would be pretty easy, and it was! It tasted like being back at school and definitely made me miss everything. Hope you like the recipe I put together!

Step 1: Ingredients (serving size: 6 cups)
  • garlic salt, to taste
  • black pepper, to taste
  • 1.5 cups stoneground grits
  • 1.5 cups marble Cheddar, shredded
  • 4 tbsps unsalted butter
  • 6 cups of water

Step 2: Starting the grits
Grits, I find, are quite easy to make and very versatile. Boil your cups of water before slowly adding in your grits. Stir until it gets nice and thick. You're going to have to continue stirring so you don't burn the grits at the bottom of your saucepan; yes, it does happen.

Step 3: Flavoring your grits & finishing
Add your butter until it has completely melted. Then add your salt & pepper. Taste first before you add Cheddar to make sure you have the desired saltiness. Add the Cheddar until fully melted. Turn off the heat and serve immediately. Grits don't keep very long so make sure to eat all you can. If you don't want such a huge amount, divide the recipe appropriately.
