Recipe - Banana Muffins


After my first day of work, they gave me some bananas that they were going to toss out so I figured I needed to do something with them. I decided to make some banana muffins. They were pretty good but as with all banana-baked goods, make sure you eat them somewhat quickly so they don't spoil! The trick that I learned to making these muffins nice and soft instead of hard (which happens with banana baked goods sometimes) is to mix by hand and not by machine.

Step 1: Ingredients (serving size: 18 muffins or 12 extra-large muffins)
  • 1/2 tsp nutmeg
  • 2/3 cup unsalted butter, melted
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1.5 cups white sugar
  • 2 tsps baking powder
  • 2 tsps baking soda
  • 2 large eggs
  • 3 cups flour
  • 6 large bananas, mashed

Step 2: Mixing the dry ingredients
Mix together the flour, baking powder, salt, cinnamon, and nutmeg.

Step 3: Combining ingredients
Mix together the bananas after you've mashed them with the sugar, eggs, and butter. When those are well mixed, fold the dry ingredients in and stir until the batter is moistened. You don't want to overmix the batter.

Step 4: Finishing
Preheat the oven to 350°F. Line a cupcake pan with paper liners or grease well. Spoon the batter into each to about 3/4s the cup or more if you want larger muffin tops. Bake for 25-30 minutes. Test the batch by inserting a toothpick in the middle of one of the muffins; if it comes out clean, it's good to go! Enjoy!
