Recipe - Cornbread Muffins


Why do I have the things I have in my pantry still? Upon discovering some delicious coarse grind cornmeal, I realized that cornbread needed to be had. I like how the coarse grind allows for some crunchy pieces however you use it but if you are a fan of otherwise, feel free to use the grind of your choice. These are great for the springtime as well because I'm willing to bet picnics and barbecue outings are in your near future! These muffins are quick and easy to make as well as delicious, especially with some honey drizzled on top.


Step 1: Ingredients (yields 12 muffins)

  • 1 cup cornmeal, coarse grind
  • 1 cup all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 cup sugar
  • 1 tsp salt
  • 1 cup almond milk
  • 2 large eggs, beaten
  • 1/2 stick butter, melted
  • 1/4 cup honey


Step 2: Prepping ingredients
Preheat oven to 400°F. Start melting the butter and then let cool. In one bowl, combine your cornmeal, flour, baking powder, sugar, and salt. In a separate bowl, mix together the milk, eggs, honey, and cooled butter. After all, if it isn't cooled, you're going to end up cooking your eggs!

Step 3: Finishing
Told you this was easy. Mix together dry and wet ingredients. Pour into a lined muffin tin and bake for 15 minutes or until golden brown. Let cool and then enjoy!
